RICOTTA SALATA (TASTY RICOTTA OR DRY RICOTTA)

Ricotta salata, also known as “ricotta secca”, is obtained by salting and seasoning the fresh ricotta. Its consistency is almost hard, it has a straw-yellow color, nice smell, strong taste. Very good to grate on top of a wonderful dish of pasta.
