The Caseificio Campolongo with the support of the CAISIAL (University Center for Innovation and Development in the Food Industry) of the Federico II University of Naples has carried out a project called OPTIMILK over the last three years.
The project saw the creation of a mozzarella that, without losing taste, is in line with the new styles of health consumption.
Mozzarella Light and Lactose Free Campolongo preserves all the fresh and delicate taste of traditional mozzarella but with 40% less fat and a high digestibility for lactose intolerant.

This is to be closer to the needs and trends of consumers.
